Quick sauce

We had nothing in the house last night, and yet, a dinner emerged! I'm estimated quantities here, but I think this is a pretty good pasta sauce dependent almost solely on pantry items:

1 T olive oil
3 cloves garlic, minced
2 large jarred roasted red peppers, diced
1 T tomato paste
1 tsp. smoked paprika
1/2 cup chicken broth
1/3 cup light cream

Cook garlic in olive oil for about two minutes on medium. Add the peppers and tomato paste and cooked about five minutes. Add the paprika and cook another 2 minutes. Add the chicken broth and cook until reduced to a fairly thick sauce (about five minutes). Add the cream and reduce again (about five minutes). Salt and pepper rather generously. Serve on pasta, of course.

I recently made a similar pasta, farfalle, feta cheese, cherry tomatoes and green beans. Everything was fresh, except the beans were thrown into the pot a minute or two before the pasta was done and then drained together.....yum! I love last minute easy dinners with fresh foods!
