Recipe?


Anyone got a good zucchini bread recipe? (Yeah, the cat's full-grown.)

I tried the Disappearing Zucchini recipe from Barbara Kingsolver's new book, "Animal, Vegetable, Miracle". It's like a simplified risotto. Boil some orzo. Meanwhile, sautee a grated zucchini and onion. Remove from the heat, add thyme and oregano, and stir in ~1/4 cup grated parmesan. Serve cool or cold.

It has a lot of the elements I like about risotto, but much less work, and made a zucchini disappear.

There's a monster zuke lurking in the garden. I'm going to foist it onto guests courtesy of a Mario Battaglia recipe. I don't know what to do about its three siblings lurking in the underbrush.

Try zucchini-apple crisp. It's great for when you're done with zucchini but zucchini's not done with you...you can't tell that it has squash because it's spiced with cinnamon, lemon zest, and brown sugar.

Heh. I got one of those bad boys in my CSA box. I wound up oven frying it (just a little oil, some salt & pepper, and a super hot oven).

It's amazing how big they'll get when the farmer just leaves them on the vine. Nothing like those teeny little things you get at the grocery store.
